Banana Bread





Today, I decided to make some banana bread, as practice for my Thanksgiving contribution this year. My first attempt was pretty good. The aroma that filled the apartment was delightful. B was very eager to try it. After taking a bite, we discovered that it was incredibly moist, just like the recipe had promised. I really liked the cinnamon that was swirled in too.

I had mixed enough batter for two loaves, which was a fortunate thing. I was too impatient transferring the first loaf from the pan onto a plate and it tore apart mid-transplant. The second time around, I let the bread settle in the loaf pan for about 10 minutes and it transferred cleanly.

I'm not a banana bread expert, so to taste test my creation, I brought some into the office. My colleagues loved it! My next door neighbor, A, claimed that it was the best banana bread that he's ever had (and that he's had a lot of banana bread in his day).

Fantastic. I can't wait to make it again in a couple of weeks. I might try to find another recipe that doesn't call for so much sugar.

Always let baked goods cool completely before transferring them anywhere! Silly J - looks great though :-D
