Rosa Mexicano Guacamole

A few months ago, B and I went to Rosa Mexicano and had their amazing made-to-order guacamole. It was so tasty, yet expensive, that it inspired us to try and recreate it in the kitchen. They even have the recipe posted on their website!

First attempt was a somewhat FAIL. The Haas avocados that we used weren't ripened nearly enough. Thus, the flavors were there, but the texture was too chunky. The second time was better. We had placed the avocados in a brown paper bag for a couple of days. After that, they were soft and ripe. We were careful not to make it too mushy.

Other ingredients for guacamole include JalapeƱo peppers, chili peppers, Spanish onion, and tomato off the vine. There's definitely something else in Rosa's that made it unique, but I doubt they would give away any secret ingredients. ;-)

I also discovered that the kind of chips used to compliment the guac is also important to consider. The first time around, I bought the Tostitos Natural Yellow Corn Restaurant Style Chips, which were fantastic. The flavor of the chip didn't overpower and fight with the guac. The second time around, I tried the regular Tostitos Restaurant Style Chips and they were much too salty.
